So, one of my sweet friends asked a really good question related to what the locals here eat. Here's what I know...
Here, typically, a very flat pancake such as this is consumed for breakfast with some very (very) sweetened spiced (ground cinnamon, cardamon, and cloves) black tea.
For lunch people here will have rice or pasta. Every single day. The rice is more like a pilau, which is basically rice cooked with a bit of veggies or meat (usually goat or lamb), with a curry seasonging. The pasta is accompanied with either a meat or vegetable sauce that goes on top. Often there is a green salad (iceberg lettuce), but usually no salad dressing. The salad is hit and miss. Sometimes you can buy some, sometimes not. When we have rice, we'll add a lot more vegetables than the locals would add. Often I will hard boil some eggs and have them available if someone wants to eat them with the rice (the locals do not do this).

Suppers around here seem to vary a bit more. Often people will again have the flat pancake (the type they had for breakfast) with a little vegetable sauce to dip it in. Others might have beans flavored with a bit of oil or salt. However, beans are not highly regarded, and are often seen as a poor man's food. One time I was making a little refried bean up for some Mexican flava' action and my neighbor stopped by. She smelled the beans and said "Wow! That smells good!" Then I told her it was beans, then she got a disgusted look on her face, and quickly left. Made me smile. Anyways. Beans. Sometimes they eat beans for supper.
Overall, not a huge variety of food. I think that's something we're very priviledged to- a huge variety of food. Americans have such a huge variety of food at their disposal. It's overwhelming to me when we go back to the States because there are so many different foods I can make. Seriously, how do you even begin? My friends here are all amazed at the different types of foods I make (its actually really not that impressive). Sometimes i think they also probably think I'm more of a garbage disposal because of all the different foods I mix together that they would NEVER put together (like raisins in bread or spinach in a soup). But.... when it comes to yum, yum is all that matters.
