Ok, so I haven't met my goal of blogging every day for a week. Thursday was super busy. I got to hold a 12 day old baby with the cutest chubby little face. And then a lot of other stuff was going on, none of which I can remember right now. And then Friday was our day of rest. So that's what I did the whole day. I rested. And it was awesome. Eden played Elmo's Zoo Adventure on the Wii with Papa Clarkson and I napped. And we did a lot of other fun stuff too, again most of which I can' remember right now (was it really only yesterday?). So, new favorite discovery- carrot pancakes. It's my oh so sneaky way of getting the cuties to eat some veggies. So far I've tried two different recipes, both were good, but both need some tweaking. The wierd thing is is that they really taste like pumpkin. One of the reviewers mentioned this, and I thought they were nutso, until I tried them. And they totally tasted like pumpkin. I love pumpkin and we have no pumpkin deliciousness here. Seriously, totally miss pumpkins. I miss fall. It's such a beautiful time of year. For those of you who get to enjoy an actual fall right now, go out and enjoy it for me. Go crunch some leaves or eat something with pumpkin or squash in it.
In other news, I'm tired. It was a good but busy day. Miss Eden and I went on our Saturday morning shopping adventure while Baby Boy stayed back and napped. She scored big time when her favorite shopkeeper gave her a juice to enjoy. Lucky little girl. Which leads me to the purpose of this post: My favorite things about life here...
In no particular order
1. Stores selling everything I need (the one exception being ice cream)for daily life are within walking distance.
2. If I wanna chat with my friend, I walk out my front door, and cross the "street." Very convenient.
3. House helpers! Every day (except one) my sweet friend comes over and cleans my house for me. It's awesome. I don't know how I ever lived without one.
4. Mid-day nap time.
5. Public reminders to pray, five times a day
6. I never ever have to do my hair. It's always covered. It's really nice.
7. We eat very healthy, I don't have to worry about food being organic, or not, or pesticide free or not, full of preservatives or not. It's real food, and it looks like it. Our beets look like they were just pulled out of the ground, the bananas are smaller and usually a bit brown and very delicious. I like knowing I'm putting good quality food into my little sweeties and my handsome hubby.
8. Really good juices, seriously great stuff here.
9. Slower pace of life, gives me more time to enjoy the sweet blessings around me.
10. If I didn't bring enough money with me when I go to the store, it's ok and still buy whatever I wanted, I can just pay for it the next time I come.

That sounds so great! I'd love to try the carrot pancake recipe once you tweak it a bit and figure out how it is best! For some reason lately I've been thinking about how nice it would be to wear a headcovering because I really don't like the pressure of having to make my hair look nice all the time. It's a lot of work to do hair! And I love the idea of not having to worry about money at the grocery store! Sounds like a great place to live!
Sweet. Carrot pancakes. Speaking of pumpkins, dad planted some baby ones for me and I'm going to be giving them to my students to decorate. I'm very excited. . they will be pumped. Neighbors next door, that kinda sounds like me, except I think I haven't seen Erin in like 4 days. Weird. Great Friday. So important to rest. Good for the soul. . . and ice cream too. Yum. real bananas, and food. I'm not sure I told you, but Hy-Vee has a number scale label on all the foods by the price. It tells you on a scale of 0-100 how healthy it is. It considers all nutrients, sugar, and natural ingredients. I love it. It's so nice. When I go to Wal-mart, I miss the helpful numbers. Most fruits and fresh veggies are 99 or 100. Great reminders.
